I dropped my middle son off at college yesterday.
He’s so excited to be there, which thrills me.
No, really. I’m so happy for him.
I’m going to be just fine. Don’t you worry.
Yep. Just me & this ol’ pumpkin coffee cake.
All three of them.
Nothing to see here people.
Oh wait…you’re wondering where the staged picture is, with the plate, placemat, silverware and a glass of milk with that adorable striped straw angled perfectly into the glass?
Yeah. No need for silverware over here. I’m so over that.
For those of you who are interested in your own pumpkin coffee cake pick-me-up, click HERE for the recipe. The recipe is from a great blog called Buns in my Oven. It’s perfect, from the crunchy streusel on top to the delicious pumpkin cake hiding underneath the inches of topping. The only thing I changed was the glaze. I made four times as much as I needed, added a drop of vanilla and ended up making it thicker by adding more powdered sugar.
When one is in need of pumpkin coffee cake, and silverware is not involved, there better be enough glaze for everyone.
